AB:Extraction of phenols with high added-value from olive oil mills effluents was studied with a view to producing extracts with antioxidative activity. The ethyl acetate extracts produced were evaluated for phenol recovery, antioxidative activity and potential application as antioxidants in refined olive oils. Antioxidative activity of the extract was compared with those of pure phenols identified in the extract using DPPH radical and β-carotene linoleate systems. Pure hydroxytyrosol and 3,4-dihydroxyphenyl acetic acid displayed highest antioxidative activity. Comparison of individual phenols and the extract in refined olive oils indicated that pure 3,4-dihydroxyphenyl acetic acid afforded greatest protection against oxidation at 50°C. Use of the extract at 500 ppm resulted in lower peroxide values than when using BHA, p-hydroxyphenylacetic acid or tyrosol. It is concluded that 3,4-dihydroxyphenyl acetic acid, hydroxytyrosol and the olive oil mills effluent extract exhibit antioxidative activity that may be useful as alternatives to synthetic antioxidants.
